E' un tutorial di sapone: posto qui perchè è più visibile, poi mi incarico io di spostarlo nella sezione Sapone.

Dal min. 6.45 usa il cucchiaio per verificare l'avvenuta emulsione, però vorrei capire quello che dice e non ci riesco. :evil:

Qualcuno che mastica più che bene questo inglese (che a me sembra americano, ma potrebbe anche essere australiano) me lo sa dire?

Da quando inizia a parlare della prova cucchiaio (6.45) a quando finisce col cucchiaio (9.25)... mi interessa sapere come fa col cucchiaio a capire che l'emulsione va bene (io ho capito qualcosa relativo al riflesso della luce).

The warmer is, and the faster you agitate the soap, the faster it saponifies. But remember that coconut oil saponifies very very fast.
If I was doing this with a stick blender it would set up quite quickly, I’d probably have it in the mold already. But using a whisk that’s obviously a lot slower, a lot less vigorous form of agitation. So It’s going to take longer but the heat helps, so the heat speeds up the tracing of the soap and speeds up saponification.
So I’m kind of balancing out the fact that I’m not using a stick blender but I’ve got things fairly warm so that it makes it a little bit faster for when you’re whisking.
So this black whisk is like a cheap one I found in an op shop (cioè un negozio dove vendono roba donata a bassissimo prezzo) for 50 cents or something and I just keep it for my soap making and it’s great, it does the job. I got this stainless steel spoon out just as a way of testing wether or not this soap is ready or not; obviousyl we’ve got to mix this a bit. This took 10 minutes alla up to bring this soap to a really good emulsification and almost like a light trace that was made it ready to pour.
So it takes a bit of whisking but you can see, the things to look out for are really: the color change, so you’ll see that as I mix this soap it goes from that clear oily color to a more pale creamy color. So once it’s getting lighter and more creamy you know that it’s emulsifying more and more and what we’re looking for is a really stable emulsion. And when you’ve got a stable emulsion when i dribble the soap batter on the back of the spoon you will see it’s smooth, the oil doesn’t separate from the lye. It’s a nice cohesive, very thin but cohesive batter (pastella). See that there’s no separation in that. Theoretically that would be fine right now. I decide to mix this a little bit longer but that is an emulsified soap batter, so thai if i pour that into a mold at that stage it would set up just fine. Anyway I whisk it a little bit more (ha problemi a stare zitta questa..) it’s quite nice, it’s only ten minutes it’s quite good to do. I am going to show some other really cool little methods for making soap without a stick blende as well; I’ve been investigating this a bit lately and it’s quite an interesting topic; there’s a lot of creative ways that you can make soap without appliances; anyway that’s for another day.
You can see this batter is getting paler, it’s getting more creamy-looking and is is coating the back of the spoon (praticamente la prova cucchiaino!!!) better and better the longer it goes. A little bit more… It doesn’t really matter what technique you use, you’re just needing to agitate the batter.
Agitation and heat are what make soap saponify (wow…!!!) so we don’t have a huge amount of heat in this, but we’ve got enough to speed it up a little bit; but the combination of heat and the agitation: thats’ what’s going to do it. It’s looking pretty good. I’m ready to pour now, see how it’s nice and light and creamy, it is at a very light trace. So i’ts definitely ready to go even if it would be thinner than a lot of people would be happy with, it is a very stable emulsion an it sets up just fine. So now it’s time to pour just get your mold whatever mold you’re using…

Praticamente questa fa la prova cucchiaino, vi versa sopra il sapone e vede che non è separato. Solo che lo fa sul dorso.

Io ci ho provato a usare questa tecnica ma... boh... :nonso:

Ho provato a usare la frusta invece del minipimer: dopo un po’ che mescolavo (la pasta di sapone era traslucida, non opaca come una crema, quindi si capiva che non si era ancora giunti all’emulsione grassi-soda) ho immerso il cucchiaino e guardato il retro... io non vedevo nessun riflesso... poi mi sono stancata di usare la frusta, sono andata di minipimer e ho rifatto la prova cucchiaino che a me è sembrata esattamente identica alla prima prova. :?

Io ci ho riprovato, all’inizio della frullata (quando palesemente grassi e soda non erano emulsionati) e dopo aver terminato la frullata e differenze non ne ho viste nonostante sapessi di trovarne... sarò anche inesperta sulla prova cucchiaino, ma sfido chiunque a capire la differenza con questa prova!

Tagliar, c'è chi sa se la pasta è cotta solo guardandola, e alle volte solo sentendo il rumore che fa l'acqua *, altri hanno bisogno di assaggiare anche dopo cinquant'anni di cotture. Se non hai l'occhio per l'emulsione separata non è grave.
